peach pie

from the children's book PIE by Sarah Weeks

6 peaches
1/2 c. brown sugar
1/4 c. sugar
1/4 c. instant tapioca
2 T. crystalized ginger, chopped fine
1/2 t. cinnamon
1 T. butter

1. mix ingredients together
2. pour into unbaked pie crust. Dot with butter
3. Cover with lattice top
4. Bake at 450 F for 10 minutes, then 350 F for 45 minutes
