1 onion
olive oil
2+ potatoes, diced
1 lb sage sausage or ground beef (browned)
4 green chiles
1 large can tomatoes
1 can corn
3 cups (1 box) chicken broth
SPICE MIX:
1 T. salt
3 T. flour
1/4 t. cumin
2 t. garlic powder
1. sautee onion in cast iron dutch oven
2. add diced potatoes and cook until golden
3. Sprinkle with spice mix
3. add tomatoes, corn and chicken broth and stir until bubbly and potatoes are soft.
4. OPTION: add carrots or other vegetables
5. Remove half of stew and set aside. Add the green chile to remaining stew and heat til bubbly. This allows people to control the amount of green chile they want by scooping from both pots!
