crock pot chicken and dumplings

I have many memories of Mom Otten making this for us!

4 chicken breasts
1 T. dried minced onions
1-2 bags frozen vegetables (I like lots of vegetables so use 2)
2 c. chicken broth
thyme, sage, parsley, salt, pepper to taste
--one batch drop biscuits (Bisquick or see below recipe)

The Directions.
Put the chicken and vegetables into the bottom of the crockpot. Add the broth. Cover and cook on high for 4-5 hours. An hour before serving, shred chicken with two large forks, and drop in the biscuit dough.

Cover and cook on high for another hour. The dumplings are done when you can insert a knife and it comes out clean. They will be spongey and will brown a bit on the sides and top.

Serve in bowls, with a dumpling per person.

Dumpling recipe:
1 c. AP flour
1 t. baking powder
1/2 c. milk

Mix and drop by 1/4 cup (or desired size) into crock pot.  Replace lid and cook for approximately 1 hour on high.
