freezer breakfast burritos

ingredients
12 eggs
2 T. butter
1 lb pork sausage, cooked and drained
1/2 c. chunky salsa
peppers
frozen hash browns
2 c. shredded cheddar
optional: refried beans
optional: green chiles
24 flour tortillas

preparation
In a large skillet, melt butter.  Beat eggs in large bowl and add to skillet.  Cook eggs in butter, stirring frequently, until scrambled and set.  Add cooked sausage and salsa to egg mixture, mixing gently.

Warm tortillas.
Place 1/2 c. egg mixture into each tortilla, add potatoes, and sprinkle with cheese.  Roll up, folding in tortilla ends.  Wrap in aluminum foil.
Freeze.
Thaw burritos in refrigerator overnight, then bake at 350 for 10-15 minutes until hot.
Makes 24 burritos
