golden cauliflower soup

From Well Fed 2 by Mel Jouwan
1 onion
2 carrots
1 T. coconut oil
1 head cauliflower, chopped
2 gloves garlic
2 c. beef broth
1 c. water
1 t. salt
1/2 t. pepper
1/2 c. coconut milk

1. Sautee onion, carrots, coconut oil
2. Add cauliflower. Cover. Stir until golden brown
3. Add remaining ingredients except coconut milk
4. Blend
5. Stir in coconut milk and serve with a little butter on top.
