BBQ Chicken Quesadillas

Note: This recipe serves 4 for 3 LUNCHES (or light dinners)... that's 12 servings
 
1.5    pounds    Chicken, cooked with BBQ Sauce           
4.5    medium sweet onions, thinly sliced           
4    Cups Mozzarella cheese, shredded                   
2    Cups homemade BBQ Sauce (See recipe)           
2    teaspoon olive oil           
                   
Directions:                   
1) Cook chicken in BBQ sauce in crockpot on low for 8 hours.
2) Heat oil in a large pan over medium heat.
3) Assemble quesadillas with cheese, chicken, cilantro and onion. Fold over and cook for 2-3 minutes a side or until golden brown and cheese has melted.
4) Place into a gallon freezer bag and freeze. (You can wrap in plastic wrap if you would like to make sure they don't stick together).

To serve: Unwrap and place onto medium heat pan and cook until warm or microwave for 3-5 minutes.                    
                   
Containers Needed: 2 Gallon Freezer Bag, plastic wrap
