Taco Soup

1 can diced tomatoes
1 bag frozen corn
1 bag frozen mixed vegetables
1 can black beans
2 c. chicken broth
1 package taco seasoning
2 T. dried minced onion
1 t. garlic powder
3 large chicken breasts
1 c. quinoa

In crockpot, layer chicken, then add everything except for quinoa.  Cook until chicken is cooked through (about 4 hours on high)  Cut chicken into bite-sized pieces
About 1/2-1 hour before serving, add quinoa and stir. Replace lid and cook on warm for 1 hour.
Serve with crunched tortilla chips and shredded cheese.

Side dish: guacamole and chips
(for guacamole we mash an avocado and mix it with Trader Joe's chunky salsa to taste)
