chicken and rice casserole

Mom Otten favorite!  Freezes well.  I made it once for the residents of Heritage Commons Assisted Living and they adored it.
  • 4 c. cooked rice
  • 2 c. cooked chicken, chopped
  • 1 c. celery, chopped
  • 1/2 c. onion, chopped
  • 1/2 c. green pepper, chopped
  • 1/2 c. water chestnuts
  • 1 c. mayonaise
  • 1 can cream of chicken soup
  • 1 or 2 T. lemon juice
  • 1 t. salt
  • 1/4 t. white pepper
  • 2 c. potato chips, crushed (for topping)
combine all ingredients except for potato chips and spread in a 9x13 baking dish
top with crushed potato chips and bake at 350F for 20-25 minutes.
