- 4 c. cooked rice
- 2 c. cooked chicken, chopped
- 1 c. celery, chopped
- 1/2 c. onion, chopped
- 1/2 c. green pepper, chopped
- 1/2 c. water chestnuts
- 1 c. mayonaise
- 1 can cream of chicken soup
- 1 or 2 T. lemon juice
- 1 t. salt
- 1/4 t. white pepper
- 2 c. potato chips, crushed (for topping)
top with crushed potato chips and bake at 350F for 20-25 minutes.
