This was a fantastic way to use up some leftovers. It would take about 15 minutes to do on the skillet, but we are loving the flexibility of putting a meal in the crockpot when we have time, and having a meal warm whenever we are ready to eat. We put all this in, went for a long run on the river, and came back hungry, with a meal instantly ready. It tasted great! Maybe in the future, when I make rice, I'll make more than necessary and the next day we can have this.
Ingredients:
2 cups leftover rice/quinoa (brown rice, etc)
3 tablespoons butter
2 tablespoons soy sauce (I added more)
2 teaspoons worcestershire sauce
1/2 teaspoon black pepper
1/2 teaspoon black pepper
1/4 teaspoon kosher salt (or 1/8 tsp iodized)
1/2 diced yellow onion
1-2 cups of whatever frozen or fresh vegetables you have on hand
leftover meat (optional)
1 egg. slightly beaten
Mix everything in crockpot and cook on high for 2-3 hours or low for 3-4
