corn chowder

My love for the crock pot continues! It really is the best way to have a hot dinner with my active family. I love the time-flexibility it gives me.

I love corn chowder and ate it a lot as a child. In Japan, for some reason, corn potage soup is very popular and I use to order it in restaurants. It was also sold in vending machines, and I used to buy it hot in a can and drink it on my way to school on cold, bleak mornings.

David loved this recipe so I'm putting in on the blog as a work in progress.

  • 6-8 potatoes (peeled and diced)
  • 1 Can cream corn (NOTE: I used 1 c. of Trader Joe's corn soup... I had it on hand and wanted to use it up.  tweak.)
  • 1 package frozen corn
  • 2 Cups chicken broth
  • 1 diced onion
  • 2 celery stalks (chopped)
  • 1 t salt
  • 1/2 t pepper
  • 1 cup milk
  • 1 Cup half and half 

Directions

  1. Step One

    Place all ingredients except for milk and cream into the slow cooker.
  2. Step Two

    Cook on low for 7-8 hours.
  3. Step Three

    Mash the mixture to your desired consistency and then add the milk and half and half.
  4. Step Four

    Cook for an additional 30 minutes on high, and you are set!
  5. Serve with cheese toast or artisan bread
