ratatouille

ingredients
1/4 c. olive oil
1 large sweet onion (sliced)
3 bell peppers (sliced)
2 cloves garlic (chopped)
1 large eggplant (chopped)
2 summer squash (chopped)
2 zucchini (chopped)
1 large can diced tomatoes
basil
1 t. salt

In a large skillet, heat olive oil.
Chop vegetables.
Sautee onions and peppers with salt and pepper.
Add in eggplant, squash, and zucchini. Stir often.
Add can of diced tomatoes.
Simmer, covered, until vegetables are soft.

Note: Leftovers are amazing... use a few tablespoons in quiche for a delicious meal.
