inside-out spring rolls

  • 1 16-ounce bag frozen pot stickers
  • 1 T. olive oil
  • 1 carrot, thinly sliced on the diagonal
  • 1 bag cabbage
  • 2 T. soy sauce
  • 1/4 c. chopped peanuts
Fry the pot stickers according to the package directions.  Meanwhile, heat the oil in a nonstick skillet over medium-high heat.  Add the carrot and cabbage and toss to coat.  Add the soy sauce and cook for 2-3 minutes.
Sprinkle with peanuts to serve.
