large russet potato (looks like Mr. Potato Head)
olive oil
kosher salt
(opt. steak seasoning)
DIRECTIONS:
- Pre-heat oven to 350 degrees
- wash and dry potato
- fork 8-12 deep holes with a fork, and dry
- in a bowl, coat it with olive oil
- sprinkle with salt (and steak seasoning for extra flavor)
- place directly on the rack (with a cooking sheet below to catch drippings) and bake for 1 hour until the skin is crispy, and the flesh is soft.
- With a fork, stab a line down the potato, then squeeze the two ends together to make the middle pop open.
