baked potatoes

from Alton Brown. We made these for the first time with lobster, and David declared that baking a potato any other way was an insult to the potato.  Can serve with steamed vegetables, ground beef, shredded cheese as a meal.


large russet potato (looks like Mr. Potato Head)
olive oil
kosher salt
(opt. steak seasoning)

DIRECTIONS:
  • Pre-heat oven to 350 degrees
  • wash and dry potato
  • fork 8-12 deep holes with a fork, and dry
  • in a bowl, coat it with olive oil
  • sprinkle with salt (and steak seasoning for extra flavor)
  • place directly on the rack (with a cooking sheet below to catch drippings) and bake for 1 hour until the skin is crispy, and the flesh is soft.
  • With a fork, stab a line down the potato, then squeeze the two ends together to make the middle pop open.
